When we first moved to the Belleville area our neighbor across the street, who is very much into natural healing and a healthy lifestyle, introduced me to kombucha tea. She gave me some to try and told me all of the health benefits, I was hooked. I found a gentleman in the county who sold scobies and I started making my own. The flavor was never very good, I tried adding a few different kinds of herbal teas to the first ferment, but it was still just something I forced down for the benefits I enjoyed. Gradually I didn’t drink it as much and stopped making it. I can’t drink a cup of freshly steeped tea whether it’s regular, herbal or green, so I miss out on the benefits that others enjoy from these, which I find very disappointing
This past year at work two of the girls were talking about Kombucha, I had been thinking I was missing it, but the memory of the taste made me hesitate. Then I heard them discussing flavors and second ferment!!!! What??? Tell me more! After many informative conversations, I was excited to get started again. With the offer of a trade, a Mother ( the starter of making Kombucha) for some handmade glass beads, my friend www.thesimpleidiot.com and I had a deal, and I was back in production!!! I love the trade idea and she has been the best help!
The flow of brewing and fermenting kombucha again was somehow satisfying, but I had a lot to learn about the flavoring this time. The first batch I flavored half with lemon-ginger, and the other half orange-vanilla. The lemon-ginger was wonderful, not fizzy, but good flavor. The orange-vanilla was disgusting, not fizzy, just disgusting!!!!
This led to more discussions about flavoring and making the tea fizzy. So armed with new ideas I went ahead with two more batches. I ordered Sour Watermelon tea from David’s Tea and added that to the Kombucha for the second ferment, then tried a few different combinations. The flavors are fantastic!!!!!
